Just a simple American wheat ale with minimal hops bitterness. This year we dialed back the orange concentrate and added orange zest. We also added Mandarina hops in the whirlpool for their citrus flavor and aroma. It’s still orange all in your face but with less of a sugary soda pop feel.

Party Favor – IPA (6.3%) Fermentables: 2-Row, Wheat, Vienna, Oat Malt, Flaked Oats Hops: Mosaic, Motueka Party Favor is brewed with a moderate amount of the high-protein grains that we like to use in hazy pales, namely wheat and oats. The featured hops variety is a New Zealand cultivar named Motueka, which contributes a fantastic zesty lime flavor. Overall, the beer has a lovely soft mouthfeel with a dry finish, restrained but present bitterness, and juicy citrus overtones. Five O’Clock Shadowboxer
Roggenbier (5.0%) Fermentables: 2-Row, Munich, CaraHell, Rye Hops: Sterling Roggenbier is a somewhat obscure German-style rye beer. Ours is fermented with a traditional Weizen yeast, which contributes spicy clove and subtle banana. It’s quite similar to the more familiar Hefeweizen style but with a warm, bready malt character and fuller mouthfeel.

IPA ABV 6.9% Fermentables: 2-Row, Wheat, CaraWheat Hops: Columbus, Citra, Amarillo Juicy, citrusy hops. Soft malted wheat. Inspiration from Coheed and Cambria. This beer is special to us.
Above the Fold
Soft & Hazy DIPA (8.6%) Fermentables: 2-Row, Oat Malt, Wheat, CaraPils, Rye Hops: Ekuanot, Denali A bigger, juicier version of Below the Fold. These beers are known for their soft, full mouthfeel and permanent haze, achieved through the use of large amounts of protein-rich grains such as oats, wheat, and rye. They are also known for a low bitterness despite the inclusion of tremendous amounts of hops, which can produce a decidedly juicy flavor, depending on the varieties of hops.
BARLEY STORM
English Strong Ale 7.6% Fermentables: 2-Row, CaraMunich, Special B, Honey Malt, Coffee Malt Hops: Columbus, Willamette This third version of Barley Storm most resembles an English Old Ale. We ferment with an English yeast strain, which provides the fruity esters that dominate the flavor and aroma. Hops are not prevalent but provide a balancing bitterness. And the malt has a hint of candy sweetness, with notes of toffee, caramel, and dark fruit.
COLLAPSIUM
Barleywine ABV 11% IBU 69 Fermentables: 2-Row, CaraRye Hops: Horizon, Goldings, Crystal The biggest, baddest beer we’ve ever brewed. This one is all malt, all the time. The heavily concentrated, not-quite-syrupy malt character is achieved by mashing a large amount of 2-row for a small kettle fill and boiling it for three hours, which is twice as long as our typical boil. The grain bill also contains a small portion of caramel rye malt to add some zing. And the hops are mostly floral but not prevalent in …

Imminent Percolations – Coffee Cream Stout (4.1%) Fermentables: 2-Row, Munich, CaraMunich, Roasted Barley, Kiln Coffee Hops/Spices: Willamette, Lactose, Coffee This just might be the smallest beer that we’ve ever brewed. It’s actually a tad lower in ABV than most American light lagers. But the lactose adds a fullness and sweet creaminess that makes it drink a more “bigly,” despite its relative lack of malt substance. Vanilla Cream Ale ABV 5.0% Fermentables: 2-Row, Wheat, CaraPils, Lactose Hops/Spices: Willamette, Vanilla All Downhill is similar to Working Class Hero, our straightforward “beer flavored” beer. The obvious difference is the addition of vanilla and lactose, which play on the “cream” idea (even if creaminess isn’t typical for the Cream Ale style). The subtle difference is the addition of 30% malted wheat in place of the Munich and Vienna malts. Turtle Recall – Turtle Survival IPA (7.2%) [IBU 30] Fermentables: 2-row, Wheat, Carapils, Flaked Oats, Lactose Hops/Spices: Citra, Wakatu, Motueka, Coconut, Lime Zest, Vanilla Beans Our second annual Turtle Survival Alliance benefit beer is a full-bodied IPA with tropical and citrusy hops, which are complemented by a touch of lime zest. Hefty portions of malted wheat and flaked oats, along with lactose (“milk sugar”), vanilla, and coconut, provide a full and creamy mouthfeel. It all comes together just a little like a coconut cream pie with a lime zest meringue. …

Eyes Aglow – Winter White (5.9%) [IBU 18] Fermentables: 2-row, Wheat, Flaked Oats, Honey, Apricot Hops/Spices: Centennial, Coriander, Nutmeg At its core, this beer is quite similar to White Hot Rage, our springtime Belgian-style witbier, which we spice with Habanero and white peppercorns. It’s a simple recipe, with plenty of malted wheat and oats laying the foundation for the estery and phenolic Belgian yeast. The coriander adds a citrusy edge to the subtle tartness of the apricot, and the nutmeg lends an earthy warmth.

Shadowgraff – Beer/Cider Hybrid (5.9%) [IBU 9] Fermentables: 2-row, CaraMunich, Apple Cider Hops: Cascade From homebrewersassociation.org – The Origins of Graf: As the story goes, graf was a fantastical, apple-based beer that appeared in the popular Stephen King series The Dark Tower. The specifics of graf aren’t discussed in detail, other than the incorporation of apples and malt in a drink that can either be sessionable or quite strong. Imperial Honey Porter (10.0%) [IBU 34] Fermentables: 2-row, Victory, Special Roast, CaraMunich, Chocolate Malt, Knotweed Honey Hops: Horizon, Willamette This is the barrel-aged version of our collaboration with Apis Meadery, which we brewed in September 2016. The beer has spent the past 6 months in Wild Turkey Bourbon barrels, where it picked up some oak and a moderate amount of bourbon flavor.
