FRUIT FOOL

Froot Fool – IPA (7.6%) [IBU 53] Fermentables: 2-row, Honey Malt, Caramel Malt, CaraPils Hops/Fruit: Apollo, Citra, Mosaic, Mango, Passion Fruit Similar to Killer Diller in terms of malt presence and hops flavor, though roughly 1% higher ABV. The malt recipe has slightly less caramel/crystal malt, making Froot Fool a little less sweet overall. The fruit flavoring is subtle, serving as a complement to the natural fruity, tropical flavors of the Citra and Mosaic hops. This beer is most likely a one-off, so get it while we gots it.

SINGLE HOP IPA  ABV 7.5%  IBU  47 Fermentables: 2-Row, CaraMunich, CaraPils Hops: X331 This is the sixth installment in a series of single-hop IPAs that we introduced in Summer 2016. The foundation of the beer is a simple, lightly sweet malt recipe designed to counterbalance the moderate bitterness of the hops. We’ll keep the ABV and IBU in a similar range for each batch. So the only variable from beer to beer will be the variety of hops.

STUNT DOUBLE

Spoonwood Brewing Stunt Double Kolsch Beer

Kolsch   ABV 5.3%   IBU 21 Fermentables: 2-Row, Pils, Vienna, Munich, CaraPils Hops: Apollo, Hallertau We call this one Stunt Double because it was originally brewed as a stand-in for Working Class Hero. It is similar in appearance and strength, but it has a hoppiness that isn’t present in Hero. The malt flavor is lightly sweet but less cereal-like than Hero. The German hops are earthy, herbal, and floral with just enough bitterness to balance malt sweetness. The yeast is a German hybrid strain with ale and lager characteristics, …

GOOD APOLLO

Pale Lager ABV 5.6% IBU 44 Fermentables: 2-row, CaraPils, Caramel malt  Hops: Apollo Another Coheed and Cambria inspired beer, named for their third album. Simply put, we borrowed some German lager yeast from Penn Brewery to ferment a pale wort and added a bunch of Apollo hops. The end result is lightly sweet and doughy with a moderate bitterness and a grassy, herbal finish.

SIDE SCROLLER

16-bit IPA ABV 7.7% IBU 50 Fermentables: 2-Row, Honey Malt, CaraMunich Hops: Columbus, Denali, El Dorado At 7.7% ABV, Side Scroller pushes the limits of a single-strength IPA. It’s moderately bitter with intense hops flavors and aromas. We used a small dose of Columbus for kettle bittering, but the spotlighted hops are two varieties that we hadn’t used before. Both are very fruity, with El Dorado contributing pear, watermelon, and stone fruit. And the Denali hops stand out with a super juicy pineapple flavor and resinous pine.

THE STACHE

Red Rye   ABV 5.1%  IBU 25 Fermentables: 2-Row, Red X, Rye, CaraRye, CaraMunich Hops: Horizon, Santiam, Crystal The Stache is all about malt, in all of its bready, caramelly goodness. The hops are meek, chosen to complement the malt with just a wisp of bitterness. And there is perhaps a slight “tang” from the rye, which makes up roughly half of the grain bill. Peach Pale ABV 5.8% IBU 18 Fermentables: Maris Otter, CaraMunich, Flaked Oats Hops/Flavors: Goldings, Crystal, Peach Purée, Black Pepper This one starts as a pale ale fermented with English yeast, providing a backdrop of subtle fruity esters that blend seamlessly with the peach purée. The fruit was added after fermentation to preserve the delicate, somewhat elusive peach flavor. OLD ALE   ABV 8.9%  IBU 44 Fermentables: 2-Row Pale, Munich, Crystal Hops: Horizon, Goldings This hefty ale was destined for Wigle straight whiskey barrels. We’ll get back to that thought in 6 to 12 months… In the meantime, sip on some of the unaged version. It’s rich and full-bodied with intense caramel and toffee flavors. Or is it flavours?

DRAGON CHASER

Imperial IPA     ABV 9.3%  IBU 75 Fermentables: 2-Row, Honey Malt, CaraPils, Flaked Oats Hops: Columbus, Chinook, Cascade, Centennial, Crystal, Meridian, Amarillo There’s too much going on here to call it a mere Double. This Imperial IPA incorporates 7 different hops varieties at a rate of more than 4.5 pounds per barrel. There’s also a ton of malt at work, creating a full body and a sweetness that enhances the overripe fruitiness of the hops. PALE ALE    ABV 6.0%  IBU 26 Fermentables: 2-Row Pale, UK Munich, UK Crystal Hops: Goldings Wartime Novelty is an English style pale ale, fermented with an English yeast strain that provides subtle apple and pear-like flavors. The Goldings hops accentuate the fruit flavors and aromas, evoking notes of orange marmalade, tobacco, and tea with honey. Bitterness is restrained. And the malt foundation is rich with biscuit and toffee.
