This third version of Barley Storm most resembles an English Old Ale. We ferment with an English yeast strain, which provides the fruity esters that dominate the flavor and aroma. Hops are not prevalent but provide a balancing bitterness. And the malt has a hint of candy sweetness, with notes of toffee, caramel, and dark fruit.
