Pale Ale (5.3%) IBU 29 Fermentables: 2-row, Munich, Honey Malt, Chocolate Malt Hops: Citra We brew this beer exclusively for Carson City Saloon and their soon-to-open sister location, Coughlin’s Law. It’s well-balanced and easy to drink, with a touch of caramel malt and a subtle, delicate hops character. We hang on to a few barrels from each batch for our taproom and send the rest to Carson City Saloon.
Bottom Line

LORNA
Belgian Strong Dark ABV 9.8% Fermentables: 2-Row Pale, Special B, Dark Candi Syrup Hops: Horizon,Goldings Lorna is the dark side of Blithe, our golden strong. It’s a simple recipe that allows the basic elements to shine. The yeast lays down a bananas foster and bubblegum vibe. The dark malt and Candi Syrup provide rich fruity and toffee-like flavors, with hints of coffee and dark chocolate. And the hops mellow in the background, balancing sweetness with with a gentle, earthy bitterness. This particular version was aged 17 months in Buffalo …

OPEN SESAME
Honey Sesame Brown Ale ABV 4.2% Fermentables: Pale Ale, Munich, Vienna, Caramel, Chocolate, Honey Hops/Spices: Sterling, Willamette, Black Sesame We brewed this low ABV “session beer” in collaboration with Church Brew Works and Pittsburgh Bottleshop for the release of the Pittsburgh Brewers Guild Brewery Guide. The malt is sourced entirely from a maltster near Philadelphia called Double Eagle, and the honey comes from Bedillion Farm in Hickory, PA. The beer is surprisingly full flavored, with a robust chocolate malt roastiness, despite its particularly low strength. The honey is subtle, with …
FREEMANG
BRUX TROIS IPA ABV 6.1% Fermentables: Pils, Wheat, CaraPils, Sugar Hops: Citra This is a once-a-year brew that requires a special yeast to create its distinct fruity character. “Bruxellensis Trois” is a strain of yeast that was formerly regarded as a type of Brettanomyces, or wild yeast. It has the ability to produce a dry, slightly tart beer with pineapple and mango characteristics. And it has a tendency to remain in suspension, leaving the beer hazy but also lending a softer mouthfeel to contrast the overall dryness. The Citra hops …
CHERRY ONLY
Cherry Smoked Porter ABV 5.5% Fermentables: 2-Row, Smoked Malt, Chocolate Malt, Caramel, Cherry Purée Hops: Columbus We love smoked beers, and for the longest time we’ve wanted to brew another. But we didn’t want to infringe upon Smoke & Oats. Seriously, how many smoked beers does your draft lineup really need? Well, apparently the answer is two. This porter is rich with caramel and chocolate malts, so the smoke has a few extra places to hide. And the subtle sweetness of the cherry purée adds further balance. By the way, …
DEAD GOON
Imperial Stout ABV 8.7% Fermentables: 2-Row, Munich, CaraMunich, Roasted Barley, Special B, Chocolate, Blackprinz Hops: Columbus Who doesn’t love a big, rich, roasty, jet-black stout in the heat of summer? Weirdos, that’s who. Okay, so maybe we’re in the minority, but as far as we’re concerned, imperial stouts are never out of season. But the real reason we started brewing Dead Goon in July/August is so that we could age a portion in bourbon barrels, for release the following October. The beer that emerges from those barrels is called …
GOOD-EYE SNIPER
DIPA ABV 8.4% Fermentables: 2-Row, CaraMunich Hops: Citra, Mosaic, Sorachi Ace, Falconer’s Flight Are you in or are you out For them all to know the end of us all
Below the Fold
Soft & Hazy Pale ABV 5.4% Fermentables: 2-Row, Oat Malt, Wheat, CaraPils Hops: Citra, Amarillo, Ekuanot Our never-say-never “New England Style” Pale. These beers are known for their soft, full mouthfeel and permanent haze, resulting from large amounts of protein-rich grains such as oats, wheat, and rye. They are also known for their low bitterness despite tremendous amounts of hops, which can produce juicy, tropical, citrusy flavors and aromas.
Only Built 4 Purple Plates
Fennel Saison 6.2% ABV Fermentables: 2-row, Spelt, Oat Malt, Flaked Rye Hops/Spices: Columbus, Mandarina, Simcoe, Fennel Seed & Pollen This beer is a collaboration with Shef Shaun of The Purple Plate, brewed specially for Fresh Fest, which is Pittsburgh’s first Black beer festival. It is a well-attenuated (dry) ale brewed with spelt, oats, and rye, and it is fermented with our favorite Belgian yeast. We added fennel seed and fennel pollen after fermentation to invoke an herbal, black licorice note that is assertive but fading.
SLICK LEG
Session IPA ABV 4.6% Fermentables: 2-Row, Honey Malt, CaraPils, Flaked Oats Hops: Citra The idea of a “session” beer is that you can drink several over the course of an evening without getting crushed. But the real trick of a session beer is to provide enough flavor – despite the low ABV – so that you want to drink several.
HALF & HALF NOT
Half & Half Not – IPA (7.2%) Fermentables: 2-Row, Wheat, Oat Malt, Vienna, CaraPils, Honey Malt, Lactose Hops/Spices: Falconer’s Flight, Lemon Zest, Ceylon Orange Pekoe tea A super creamy IPA, thanks to lots of wheat, oats, and milk sugar (lactose). Falconer’s Flight is a citrusy blend of hops, which together with the lemon zest provide the lemonade component. And the Ceylon black tea adds a subtle herbal character with a hint of dryness to balance the residual sweetness. If you haven’t already put it together, this beer is based on …
SMOKE & OATS
SMOKED AMBER ABV 5.0% Fermentables: Smoked Malt, Munich, CaraMunich, Flaked Oats Hops: Columbus, Willamette Smoke & Oats is our tribute to the stunning Rauchbiers of Bamberg, Germany. Smoke is the prevalent flavor, of course, but there is a pleasant underlying sweetness, with toasty malt and a gentle hops bitterness in the finish. The defining character comes from a combination of cherry- and beech-smoked malts, which comprise more than 50% of the total grain bill.
