HYDRA SLAYER

IMPERIAL RED ALE   ABV 7.5% Fermentables: 2-Row, Vienna, Red X, CaraMunich Hops: Columbus, Mosaic, Simcoe Hydra Slayer is in the vain of a double IPA, with a firm but well-integrated bitterness. The striking deep red color is achieved through a combination of German Vienna and “Red X” malts, with a touch of caramel malt for enhanced color and sweetness. Simcoe and Mosaic hops add an overall fruity aroma and flavor, specifically citrus & berry, with pine resin.

Imperial IPA     ABV 9.3%  IBU 75 Fermentables: 2-Row, Honey Malt, CaraPils, Flaked Oats Hops: Columbus, Chinook, Cascade, Centennial, Crystal, Meridian, Amarillo There’s too much going on here to call it a mere Double. This Imperial IPA incorporates 7 different hops varieties at a rate of more than 4.5 pounds per barrel. EARTHSIDE

OATMEAL STOUT   ABV 6.0%  IBU 30 Fermentables: 2-Row, Black Malt, Roasted Barley, CaraMunich, Victory, Oats Hops: Horizon, Willamette Really, quite a traditional stout. WARTIME NOVELTY

PALE ALE    ABV 6.0%  IBU 26 Fermentables: 2-Row Pale, UK Munich, UK Crystal Hops: Goldings Wartime Novelty is an English style pale ale, fermented with an English yeast strain that provides subtle apple and pear-like flavors. The Goldings hops accentuate the fruit flavors and aromas, evoking notes of orange marmalade, tobacco, and tea with honey. Bitterness is restrained. And the malt foundation is rich with biscuit and toffee.

Hoppy Belgian Amber 7.4% ABV 50 IBU Fermentables: 2-row, Munich, CaraMunich, Special B, Brown Sugar Hops: Cascade, Columbus We brewed this beer in collaboration with Full Pint Brewing Co. and Hops On Lots Pgh (HOLP), which is a local urban hops growing initiative. And like the original, it starts out as a golden to light amber ale, which we infuse with a strong cold-brewed coffee after fermentation. Turns out I was three for three on my predictions. We did, indeed, brew Good Tidings Belgian Christmas Ale, Chocolate Town Cream Stout, and Collapsium Barleywine. They will almost certainly be released in that order, beginning with Good Tidings on the first Wednesday in December. Barley Storm, our Winter Warmer, continues to rest patiently in the fermenter. Saison   ABV 7.1%   34 IBU Fermentables: 2-Row Pale, Wheat, Aromatic, Honey Malt, Honey Hops: Santiam, Ultra, Mosaic Honeydripper is made with the same yeast as Freemang IPA. It’s a yeast with a distinctive, over-the-top fruitiness, so the two beers have undeniably similar flavors. The additional wheat and aromatic malt in the Honeydripper recipe provide a richer, bready quality that moderates the yeasty fruitiness.
