IMPERIAL RED ALE ABV 7.5% Fermentables: 2-Row, Vienna, Red X, CaraMunich Hops: Columbus, Mosaic, Simcoe Hydra Slayer is in the vain of a double IPA, with a firm but well-integrated bitterness. The striking deep red color is achieved through a combination of German Vienna and “Red X” malts, with a touch of caramel malt for enhanced color and sweetness. Simcoe and Mosaic hops add an overall fruity aroma and flavor, specifically citrus & berry, with pine resin.
IPA ABV 6.9% Fermentables: 2-Row, Wheat, CaraWheat Hops: Columbus, Citra, Amarillo Juicy, citrusy hops. Soft malted wheat. Inspiration from Coheed and Cambria. This beer is special to us.
Shadowgraff – Beer/Cider Hybrid (5.9%) [IBU 9] Fermentables: 2-row, CaraMunich, Apple Cider Hops: Cascade From homebrewersassociation.org – The Origins of Graf: As the story goes, graf was a fantastical, apple-based beer that appeared in the popular Stephen King series The Dark Tower. The specifics of graf aren’t discussed in detail, other than the incorporation of apples and malt in a drink that can either be sessionable or quite strong. Whether by coincidence or direct inspiration from the book series, homebrewers began brewing their own versions of graf to create a hybrid …
Hoppy Wheat ABV (6.5%) IBU 40 PCBW collaboration with Mindful Brewing Co.
OLD ALE ABV 8.9% IBU 44 Fermentables: 2-Row Pale, Munich, Crystal Hops: Horizon, Goldings This hefty ale was destined for Wigle straight whiskey barrels. We’ll get back to that thought in 6 to 12 months… In the meantime, sip on some of the unaged version. It’s rich and full-bodied with intense caramel and toffee flavors. Or is it flavours?
Imperial IPA ABV 9.3% IBU 75 Fermentables: 2-Row, Honey Malt, CaraPils, Flaked Oats Hops: Columbus, Chinook, Cascade, Centennial, Crystal, Meridian, Amarillo There’s too much going on here to call it a mere Double. This Imperial IPA incorporates 7 different hops varieties at a rate of more than 4.5 pounds per barrel. There’s also a ton of malt at work, creating a full body and a sweetness that enhances the overripe fruitiness of the hops. But the firm bitterness at the finish and the higher alcohol are just the …
2 MINUTES TO MIDNIGHT
IMPERIAL STOUT ABV 10.3% IBU 61 Aged just a little more than a year in a Wigle Straight Wheat barrel. Plus a bit of chocolate and vanilla for a finishing touch. “The hands that threaten doom…”
OATMEAL STOUT ABV 6.0% IBU 30 Fermentables: 2-Row, Black Malt, Roasted Barley, CaraMunich, Victory, Oats Hops: Horizon, Willamette Really, quite a traditional stout. The English yeast and the oats leave the beer with a soft, full, silky mouthfeel. And the dark malts provide a roasty, chocolatey flavor with a bit of coffee-like bitterness. And what the heck is “Earthside”? Well, it’s just a nerdy, science-fictiony way of saying, “on the planet Earth.” As opposed to some other planet, a long time ago, in a galaxy far, far away…
PALE ALE ABV 6.0% IBU 26 Fermentables: 2-Row Pale, UK Munich, UK Crystal Hops: Goldings Wartime Novelty is an English style pale ale, fermented with an English yeast strain that provides subtle apple and pear-like flavors. The Goldings hops accentuate the fruit flavors and aromas, evoking notes of orange marmalade, tobacco, and tea with honey. Bitterness is restrained. And the malt foundation is rich with biscuit and toffee.
Hoppy Belgian Amber 7.4% ABV 50 IBU Fermentables: 2-row, Munich, CaraMunich, Special B, Brown Sugar Hops: Cascade, Columbus We brewed this beer in collaboration with Full Pint Brewing Co. and Hops On Lots Pgh (HOLP), which is a local urban hops growing initiative. This year marked the initial planting for HOLP, so there wasn’t a useable crop for our brew. But we did feature Cascade hops, which is a variety that will likely be grown locally. So what we came up with is a hop-forward amber ale fermented with our …
COLD DRIP DOPPIO
Double Coffee Ale (8.0%) [IBU 33] Fermentables: 2-Row Pale, Vienna, Crystal, Flaked Barley, Lactose Hops/Spices: Horizon, Goldings, Coffee This is the amped up version of our coffee ale, Cold Drip City. And like the original, it starts out as a golden to light amber ale, which we infuse with a strong cold-brewed coffee after fermentation. The base beer is designed to deliver a malty sweet background for the coffee, with a full, creamy mouthfeel from the addition of lactose (milk sugar). What makes it a “double”? First, the ABV is …
BARLEY STORM BOMBERS
22 oz. Bottles *TAKE OUT ONLY*
In The Tank, Out The Tank (Vol. 3)
Turns out I was three for three on my predictions. We did, indeed, brew Good Tidings Belgian Christmas Ale, Chocolate Town Cream Stout, and Collapsium Barleywine. They will almost certainly be released in that order, beginning with Good Tidings on the first Wednesday in December. Barley Storm, our Winter Warmer, continues to rest patiently in the fermenter. It’s a big beer, in need of some extra tank time to mellow. Early samples indicate that the bottled version will age well, so we’ll definitely lay down a few cases. Barring any …
Extra Pale ABV 4.1% IBU 28 Fermentables: 2-Row Pale, Pils, Wheat, CaraPils, Honey Malt Hops: Bravo, Nelson Sauvin, Motueka Too hoppy to be a Blonde and not quite hoppy enough to be a Session IPA, this beer falls somewhere between styles. It has a light body, low ABV, and cleansing bitterness – all traits that make it highly sessionable. Which is to say you can drink several in a sitting without experiencing palate fatigue or exhibiting a vulgar display of public intoxication. Believers is bittered with Bravo, an American …
Saison ABV 7.1% 34 IBU Fermentables: 2-Row Pale, Wheat, Aromatic, Honey Malt, Honey Hops: Santiam, Ultra, Mosaic Honeydripper is made with the same yeast as Freemang IPA. It’s a yeast with a distinctive, over-the-top fruitiness, so the two beers have undeniably similar flavors. The additional wheat and aromatic malt in the Honeydripper recipe provide a richer, bready quality that moderates the yeasty fruitiness. And the honey (from Bedillion’s Farm in Hickory, PA) plays well with the amped up maltiness. However, the key difference is the hops selection. Freemang …
