CHILI PALE ABV 5.0%   Fermentables: 2-row, Wheat, Munich, Honey Malt   Hops/Spices: Columbus, Habanero, Serrano, Orange Zest     When we released our first batch, some folks said that Secret Alphabet wasn’t hot enough. So we upped the ante on the chili peppers, and now there’s definitely some heat. It’s not over-the-top ghost pepper torture type heat, but there’s no mistaking the capsaicin. Soft & Hazy Pale ABV 5.4% Fermentables: 2-Row, Oat Malt, Wheat, CaraPils Hops: Citra, Amarillo, Ekuanot Our never-say-never “New England Style” Pale. These beers are known for their soft, full mouthfeel and permanent haze, resulting from large amounts of protein-rich grains such as oats, wheat, and rye. They are also known for their low bitterness despite tremendous amounts of hops, which can produce juicy, tropical, citrusy flavors and aromas.

GOOD APOLLO

Pale Lager ABV 5.6% IBU 44 Fermentables: 2-row, CaraPils, Caramel malt  Hops: Apollo Another Coheed and Cambria inspired beer, named for their third album. Simply put, we borrowed some German lager yeast from Penn Brewery to ferment a pale wort and added a bunch of Apollo hops. The end result is lightly sweet and doughy with a moderate bitterness and a grassy, herbal finish.

Peach Pale ABV 5.8% IBU 18 Fermentables: Maris Otter, CaraMunich, Flaked Oats Hops/Flavors: Goldings, Crystal, Peach Purée, Black Pepper This one starts as a pale ale fermented with English yeast, providing a backdrop of subtle fruity esters that blend seamlessly with the peach purée. The fruit was added after fermentation to preserve the delicate, somewhat elusive peach flavor. PALE ALE   ABV  6.9%  IBU  17 Fermentables: 2-Row Pale, Munich, Crystal, Flaked Oats Hops: Bravo, Cascade, Goldings, Crystal, Meridian A relatively strong (“double”) pale ale brewed with flaked oats, which account for the softer, fuller mouthfeel and the hazy appearance. El Dopa has a restrained bitterness with an intense herbal, floral, almost tea-like flavor and aroma. Incidentally, the name is an acronym for Double Oatmeal Pale Ale. And it is also a play on the naturally occurring biochemical L-DOPA, which makes you and me happy.
