A simple grain recipe fermented with a characterful Belgian yeast, balanced with elegant, fragrant hops. The yeast lends a ripe fruitiness with a hint of spice, and the alcohol and hops have a drying quality. Blithe is deceptively formidable, so tread lightly!

BELGIAN TRIPEL  ABV 8.2% IBU  29   Fermentables: 2-Row, Pilsner, Candi Sugar Hops: Apollo, Hallertau Blanc   A traditional Belgian golden strong ale with the addition of dry-hopping. Ambellina is built upon a simple grain bill (2-Row and Pilsner malts) with Candi Sugar to enhance fermentability. The Hallertau Blanc hops play well with the fruit and spice of the Belgian yeast, adding notes of tropical fruit and white grape. A hint of alcohol dries the finish and contributes a subtle fruitiness of its own.  

BRUNA

Belgian Porter   ABV 7.1%  IBU 30 Fermentables: 2-row, Munich, Chocolate Malt, Special B, Candi Syrup Hops: Cascade, Crystal One of our seven “original lineup” beers, and a brewer favorite. It’s fake news, as far as beer styles are concerned, landing somewhere between a Strong American Porter and a Belgian Trappist Dubbel. Belgian Pale  ABV 5.4%  IBU 22   Fermentables: 2-Row, Munich, Aromatic Hops: Santiam, Goldings, Crystal Sort of elegant, a little sophisticated, but gentle and approachable. There are a few simple flavors and aromas at play here. The foundation of lightly toasted, bready malt. Earthy, floral, spicey  hops. And a subtle fruitiness from Belgian yeast.

Belgian Christmas   ABV 7.1%  IBU 26 Fermentables: 2-Row Pale, Pils, Special B, Candi Sugar, Cranberries, Cherries Hops: Santiam Good Tidings is a celebratory ale brewed with Belgian yeast, candi sugar, dried cranberries and cherries, and cherry juice. It’s hardly a fruit-forward beer, but the cranberries and cherries do impart a slight reddish hue plus a hint of tartness.
