It’s well-balanced and easy to drink, with a touch of caramel malt and a subtle, delicate hops character. We hang on to a few barrels from each batch for our taproom and send the rest to Carson City Saloon.

Fennel Saison 6.2% ABV Fermentables: 2-row, Spelt, Oat Malt, Flaked Rye Hops/Spices: Columbus, Mandarina, Simcoe, Fennel Seed & Pollen This beer is a collaboration with Shef Shaun of The Purple Plate, brewed specially for Fresh Fest, which is Pittsburgh’s first Black beer festival. It is a well-attenuated (dry) ale brewed with spelt, oats, and rye, and it is fermented with our favorite Belgian yeast. We added fennel seed and fennel pollen after fermentation to invoke an herbal, black licorice note that is assertive but fading.

But the real trick of a session beer is to provide enough flavor – despite the low ABV – so that you want to drink several.

AMERICAN WHEAT ABV 3.4% IBU 07 Fermentables: Pils, Wheat, Carapils Hops: Sorachi Ace, Goldings, Amarillo A lightly soured wort is produced by adding Lactobacillus to the kettle, prior to boil. Lemon, grapefruit, and earthy dry-hops, along with a touch of lemon, complement the overall citric character. Light and refreshing, not unlike a gentle breeze.
