Hefeweizen is a type of German wheat beer. “Hefe” means yeast and “Weizen” means wheat. And what we have here is a wheat-heavy beer fermented with an estery, phenolic yeast. We fermented at a warmer temperature to promote the production of fruity esters like isoamyl acetate, which smells and tastes like banana. The yeast also produces phenols like 4-vinyl guaiacol, which has a spicy clove-like character. There is a heightened acidity, which together with the wheat lends a sourdough quality.
