Fennel Saison 6.2% ABV Fermentables: 2-row, Spelt, Oat Malt, Flaked Rye Hops/Spices: Columbus, Mandarina, Simcoe, Fennel Seed & Pollen This beer is a collaboration with Shef Shaun of The Purple Plate, brewed specially for Fresh Fest, which is Pittsburgh’s first Black beer festival. It is a well-attenuated (dry) ale brewed with spelt, oats, and rye, and it is fermented with our favorite Belgian yeast. We added fennel seed and fennel pollen after fermentation to invoke an herbal, black licorice note that is assertive but fading.

Half & Half Not – IPA (7.2%) Fermentables: 2-Row, Wheat, Oat Malt, Vienna, CaraPils, Honey Malt, Lactose Hops/Spices: Falconer’s Flight, Lemon Zest, Ceylon Orange Pekoe tea A super creamy IPA, thanks to lots of wheat, oats, and milk sugar (lactose). Falconer’s Flight is a citrusy blend of hops, which together with the lemon zest provide the lemonade component. Party Favor – IPA (6.3%) Fermentables: 2-Row, Wheat, Vienna, Oat Malt, Flaked Oats Hops: Mosaic, Motueka Party Favor is brewed with a moderate amount of the high-protein grains that we like to use in hazy pales, namely wheat and oats. The featured hops variety is a New Zealand cultivar named Motueka, which contributes a fantastic zesty lime flavor. Overall, the beer has a lovely soft mouthfeel with a dry finish, restrained but present bitterness, and juicy citrus overtones. Turtle Recall – Turtle Survival IPA (7.2%) [IBU 30] Fermentables: 2-row, Wheat, Carapils, Flaked Oats, Lactose Hops/Spices: Citra, Wakatu, Motueka, Coconut, Lime Zest, Vanilla Beans Our second annual Turtle Survival Alliance benefit beer is a full-bodied IPA with tropical and citrusy hops, which are complemented by a touch of lime zest. Hefty portions of malted wheat and flaked oats, along with lactose (“milk sugar”), vanilla, and coconut, provide a full and creamy mouthfeel. It all comes together just a little like a coconut cream pie with a lime zest meringue. …
FRUIT FOOL
Froot Fool – IPA (7.6%) [IBU 53] Fermentables: 2-row, Honey Malt, Caramel Malt, CaraPils Hops/Fruit: Apollo, Citra, Mosaic, Mango, Passion Fruit Similar to Killer Diller in terms of malt presence and hops flavor, though roughly 1% higher ABV. The malt recipe has slightly less caramel/crystal malt, making Froot Fool a little less sweet overall. The fruit flavoring is subtle, serving as a complement to the natural fruity, tropical flavors of the Citra and Mosaic hops. This beer is most likely a one-off, so get it while we gots it.
FOREVER SINGLE
SINGLE HOP IPA ABV 7.5% IBU 47 Fermentables: 2-Row, CaraMunich, CaraPils Hops: X331 This is the sixth installment in a series of single-hop IPAs that we introduced in Summer 2016. The foundation of the beer is a simple, lightly sweet malt recipe designed to counterbalance the moderate bitterness of the hops. We’ll keep the ABV and IBU in a similar range for each batch. So the only variable from beer to beer will be the variety of hops.
SIDE SCROLLER
16-bit IPA ABV 7.7% IBU 50 Fermentables: 2-Row, Honey Malt, CaraMunich Hops: Columbus, Denali, El Dorado At 7.7% ABV, Side Scroller pushes the limits of a single-strength IPA. It’s moderately bitter with intense hops flavors and aromas. We used a small dose of Columbus for kettle bittering, but the spotlighted hops are two varieties that we hadn’t used before. Both are very fruity, with El Dorado contributing pear, watermelon, and stone fruit. And the Denali hops stand out with a super juicy pineapple flavor and resinous pine.

Single Hop IPA ABV 7.5% IBU 72 Fermentables: 2-Row, CaraMunich, CaraPils Hops: HBC342 This is the third installment in our single-hop IPA series. Killer Diller is built upon a simple grain bill and two varieties of hops, Columbus & Ekuanot. We mix it up from batch to batch with various dry-hops, including Citra, Mosaic, and Simcoe.
