Wowie Zowie
IPA (7.2%) Fermentables: 2-Row, Wheat, Oat Malt, CaraPils, Flaked Oats Hops: Simcoe, Mosaic, Ekuanot We’re thinking of Wowie Zowie as the hazy counterpart to Killer Diller. Its grain bill is comparable to the other hazy pales that we brew, and the hops are the same combination that we typically use in Killer Diller. Taste them side by side and decide which you like better, though your answer will probably be wrong, unless you agree with Brewer James.

WHITE IPA ABV 6.4% Fermentables: 2-Row, Wheat, CaraPils, Oats Hops/Spices: Amarillo, Mandarina, Orange Zest, Coriander A Belgian witbier at heart. But in the kettle, it takes a turn toward IPA country. Pale and hazy from suspended yeast and proteins, and spiced with orange zest and coriander, the way a witbier ought to be. American and German hops double up the fruity character of the Belgian yeast, providing distinct orange, tangerine, and grapefruit flavors. Altogether a darn fine beer for summertime drinking.

Pale Ale (5.3%) IBU 29 Fermentables: 2-row, Munich, Honey Malt, Chocolate Malt Hops: Citra We brew this beer exclusively for Carson City Saloon and their soon-to-open sister location, Coughlin’s Law. It’s well-balanced and easy to drink, with a touch of caramel malt and a subtle, delicate hops character. We hang on to a few barrels from each batch for our taproom and send the rest to Carson City Saloon.

BRUX TROIS IPA ABV 6.1% Fermentables: Pils, Wheat, CaraPils, Sugar Hops: Citra This is a once-a-year brew that requires a special yeast to create its distinct fruity character. “Bruxellensis Trois” is a strain of yeast that was formerly regarded as a type of Brettanomyces, or wild yeast. It has the ability to produce a dry, slightly tart beer with pineapple and mango characteristics.
