We’ve finally gotten around to brewing a “New England Style” Pale, a sub-genre arguably spawned by the Alchemist’s Heady Topper out of Vermont. These beers are known for their soft, full mouthfeel and permanent haze, achieved through the use of large amounts of protein-rich grains such as oats, wheat, and rye, and an altered water profile. They are also known for their low bitterness despite tremendous amounts of hops, which can produce an orange juice flavor, depending on the hops varieties.
